This emerald inspired melon cocktail is a take on the classic margarita with melon liqueur, fresh lime juice, and served with an emerald gemstone gummy. The Emerald City is part of a series of cocktails inspired by gemstones.
The emerald is unique among other precious stones in that it is always “flawed”. Emeralds have many natural scratches that are usually filled in with some kind of oil or resin to fill the scratches in and make them sparkle brighter. While diamonds are put under a microscope to determine how “perfect” they are, emeralds’ perfection are determined by looking at them with the naked eye. Some emeralds are even prized because of the unique character they are given because of these flaws.
Like many gemstones known to the ancient world, emeralds have a long history of lore and magical properties assigned to them. They are believed to have the power of rebirth, growth, fertility, and give people the ability to speak beautifully, whatever the fuck that means.
The Roman emperor Nero, the one people say fiddled why Rome burned to the ground (although historical evidence leads to this being a crock of it, not least because the fiddle didn’t exist at the time), supposedly looked through a giant emerald while watching the gladiators fight to the death. Maybe because it made the gore more bearable or perhaps he was just making a fashion statement.

Emerald City - Green Melon Margarita
Ingredients
- 1 oz Tequila
- 1 oz Melon Liqueur e.g. Midori
- .75 oz Lime Juice
- .25 oz Agave Nectar or simple syrup
Instructions
- Shake all ingredients together.
- Serve over ice or in a martini glass.

Green Melon Emerald Gummy Recipe
Ingredients 1/2 cup Melon Liqueuer (such as Midori), 3oz package Lime jello, 3 packets unflavored gelatin.
The technique for these edible gems is the same as the other cocktails inspired by gemstones, so feel free to skip the rest if you’ve mastered it already. If you’re new, this seems like a lot of work, but it’s surprisingly easy.
Combine melon liqueur and lime jello in a microwave safe bowl. Stir until dissolved
Mix in 3 packets of unflavored gelatin. You want to continuously stir while slowly sprinkling the gelatin powder in, being careful not to let any clumps form. Use the back of your spoon to break up any small clumps that might form.
Pro Tip: Use a spoon instead of a whisk. A whisk will introduce air into the mixture which will result in cloudy diamonds.
Let the mixture rest for 5-10 minutes to allow the gelatin to absorb the liquid. Mine became a paste like texture.
While it rests, take your Gem Molds and give them a very light coating of vegetable oil. I used my freshly washed fingers lightly dipped in the oil.
Pro Tip: Coating the molds (lightly!) in oil will make the green melon emerald gummies pop right out and give the gems a nice glossy sheen.
Take your rested green goo and pop it in the microwave for about 1 1/2 minutes. Keep an eye on it, as it will become very frothy and expand right out of the bowl. This will result in a very messy microwave (trust me).
Take your hot gelatin and put it in the fridge for just a few minutes. A foamy substance should form at the top. Use a spoon to skim the foamy gunk off. This step is technically optional, but your emerald gummies will be cloudy if you skip it.
Carefully fill your molds. I used a food syringe to make sure I didn’t spill. Pop the mold in the freezer for about 20 minutes and carefully remove.
To serve I used a metal garnish pick and skewered the emerald gummies. Carefully place it on your green melon cocktail and enjoy!
The green melon emerald gummies will keep for at least a week (probably a lot longer, but I always end up eating mine fairly quickly) if kept in an airtight container in the fridge.
